Coca-Cola Cake

Cake

2 cups self-rising flour

2 cups sugar

3 Tbl cocoa

1 c Coca-Cola

1 c butter

1 1/2 c miniature marshmallows

2 eggs, beaten

1/2 c buttermilk

1 tsp baking soda

1 tsp vanilla

Frosting

1/2 cup butter

1 Tbl cocoa

6 Tbl Coca-Cola

1 box confectioner’s sugar, 1 pound

1/2 c chopped pecans

 

~Preheat oven to 350

~Grease and flour 9 x 13 pan

~In large bowl combine flour and sugar.

~In saucepan combine the cocao, Coca-Cola, butter and marshmallows.  Slowly pour into the flour/sugar mixture, stirring well.

~In separate bowl mix eggs, buttermilk, baking soda and vanilla.  Add to the first mixture.

~Pour into prepared 9 x 13 pan and bake for 35 minutes or until cake tests done.

For Frosting:

~In a saucepan bring butter, cocoa and Coca-Cola to a boil.

~Stir in the sugar and mix well.

~Stir in nuts.

~Spread over the cake while both cake and frosting are still warm.

Boston Cream Pie

3 eggs, separated
1 tsp vanilla
1 cup sugar, divided
1/8 tsp salt
3/4 cup cake flour
1 package (2.75 or 3 oz) vanilla pudding mix
1 1/2 cups milk
3 Tbl light corn syrup
2 Tbl water
4 squares (4 oz) semi-sweet chocolate, coarsely chopped
 
~Preheat oven to 350.  Grease a 9″ round cake pan; line with wax paper
~Beat egg yolks and vanilla on medium speed until blended; beat in 1/4 cup sugar until very thick and pale
~Using clean, dry beaters, beat egg whites and salt with electric mixer until soft peaks form.  Gradually beat in 1/4 cup sugar until stiff peaks form.  Fold yolk mixture into whites.  
~Sift flour over mixture; fold in gently.  Do not over-mix.  Pour batter into pans
~Bake 25 minutes or until cake springs back when gently pressed.  Remove from pan and cool completely on wire wrack
~Combine pudding mix and milk in a saucepan and cook following package directions.  Transfer to shallow bowl, cover and chill for 30 minutes
~Cut cake horizontally in half.  Place bottom half on serving plate.  Spread filling evenly on cake.  Place top of cake carefully on filling
~Meanwhile, bring remaining sugar, corn syrup and water to a boil in saucepan over low heat, stirring constantly.  Remove from heat; add chocolate.  Let stand for 1 minute.  Whisk until smooth. Gradually pour over cake; let stand until glaze sets

Marbled Cheesecake

Chocolate crumb crust
1/4 cup butter, melted
1/4 cup Hershey’s cocoa
4 (8oz) packages cream cheese, softened
1 (14oz) can sweetened condensed milk
4 eggs
1 Tbl vanilla
1/3 cup flour
 
~Preheat oven to 300
~Prepare chocolate crumb crust according to package directions
~Stir together butter and cocoa until smooth – set aside
~In large mixing bowl, beat cream cheese until smooth
~Beat in eggs and vanilla
~Add flour
~Add 1 1/2 cups batter mixture to butter/cocoa mixture – mix well
~Layer prepared springform pan with half vanilla mixture, half chocolate mixture
~Repeat layering with remaining mixtures
~With metal spatula, cut through batters to obtain a “marble” effect
~Bake 50 – 60 minutes or until center is set
~Cool completely and then chill for at least 2 hours before serving
~Refrigerate leftovers
