Caramel Apple Cheesecake Squares

Crust
1 1/4 c graham cracker crumbs
1/2 cup butter, melted
3 Tbl brown sugar
 
Apple Layer
4  cups thinly sliced peeled tart apples
1/4 c all-purpose flour
1 Tbl sugar
 
Cream Cheese Layer
1 package (8 oz) cream cheese, softened
3/4 cup sugar
3 Tbl sour cream
1 tsp vanilla
2 eggs, slightly beaten
 
Caramel Layer
1 package (14oz) caramels
1/3 cup 2% milk
 
Topping
1/4 cup rolled oats
1/4 cup packed brown sugar
1/8 cup all-purpose flour
1/8 tsp ground nutmeg or cinnamon
1/8 cup butter, softened
 
Preheat oven to 350
 
Crust~In small bowl, combine crumbs, butter and brown sugar.  Press onto bottom of well-greased 13x9x2 pan.  Bake at 350 for 8 – 10 minutes.  Cool
 
Apple Topping~In small bowl, combine the apples, flour and sugar; spoon over cooled crust. 
 
Cream Cheese Topping~In a small bowl, beat cream cheese and sugar until smooth.  Beat in sour cream and vanilla.  Add eggs; beat on low speed until just combined.  Pour over apples
 
Caramel Topping~In small saucepan, combine caramels and milk.  Cook over low heat, stirring often until smooth, making sure not to allow it to burn.  Pour over cream cheese layer. 
 
Topping~In small bowl, combine topping ingredients, sprinkle evenly over caramel
 
~Bake at 350 for 35 – 40 minutes or until cream cheese is almost set in center.  Remove from oven, place on wire rack and cool for at least 1 hour.  Cover and refrigerate for 3 hours before serving.

Streusel Coffee Cake

1 1/2 cups flour + 1 Tbl (divided)
3/4 cup sugar
2 tsp baking powder
1/4 tsp salt
1 egg
1/2 cup milk
1/4 cup oil
2 Tbl brown sugar
1 tsp cinnamon
1 Tbl butter
1/2 cup nuts
~Preheat oven to 375
~In large bowl mix together 1.5 cups flour, 3/4 sugar, baking powder and salt, set aside
~In large bowl stir together egg, milk, oil
~Slowly add flour mixture to egg mixture stirring thoroughly
~Pour into greased 9×9 pan
To make Streusel
~Combine brown sugar, 1 Tbl flour and cinnamon, cut in butter and mix until crumbly
~Add nuts if desired
~Sprinkle streusel mixture over batter and bake for 30 minutes or until toothpick inserted in middle comes out clean

Punch Bowl Trifle

1 package (18.25 oz) chocolate cake mix & ingredients to make cake
1 quart fresh whole strawberries
1 carton (15 oz) strawberry glaze
2 cartons (12 oz each) Cool Whip, divided
1 cup chocolate frosting
Shaved chocolate
~Prepare and bake cake according to package directions using a 9 x 13 pan.  Cool completely on wire rack
~Set aside five strawberries for garnish
~Slice remaining strawberries
~Cut cake into 1″ cubes
~Place half of the cubes in a 6-qt punch bowl.  Top with half of the sliced strawberries; drizzle with half of the strawberry glaze.  Spread with 3 1/2 cup whipped topping
~In microwave-safe bowl, heat frosting on high for 20 – 30 seconds or until pourable, stirring often; cool slightly.  Drizzle half over the whipped topping.
~Repeat layers of cake, berries, glaze, cool whip and frosting.
~Top with remaining cool whip
~Garnish with shaved chocolate and reserved strawberries
