Caramel Popcorn

1 cup butter

2 cups brown sugar

1/2 cup corn syrup

1 tsp salt

1/2 tsp baking soda

1 tsp vanilla extract

5 quarts popped popcorn (2 bags microwave or heaping 1/2 cup kernels popped)

 

~Preheat oven to 250.  Place popcorn in a very large bowl

~In a medium saucepan over medium heat, melt butter.  Stir in brown sugar, corn syrup and salt.  Bring to a boil, stirring constantly.  Boil without stirring 4 minutes.  Remove from heat and stir in soda and vanilla.  Pour in a thin stream over popcorn, stirring to coat

~Place in two large shallow baking dishes (or 1 large deep baking dish) and bake in preheated oven, stirring every 15 minutes for 1 hour.  Remove from oven, pour onto piece of parchment paper and allow to cool completely.

Dump Fudge

1 box powdered sugar (4 cups)
1/2 cup cocoa
1/4 tsp salt
1 Tbl vanilla
1/4 cup milk
1 stick butter
~Combine first 5 ingredients in large microwave bowl
~Place butter on top
~Microwave on high for 2 minutes, remove (using pot holders) and stir until smooth
~Put in greased 8″ square container and chill for 1 hour
~Cut and serve
~Store in air tight container

Peanut Butter Fudge

4 cups sugar
1/2 cup light corn syrup
2 sticks unsalted butter
1 cup evaporated milk
1 Tbl pure vanilla extract
1 cup (9 oz) smooth peanut butter
2 heaping Tbl marshmallow cream
~Lightly grease 9 x 13 pan, set aside
~In large saucepan, combine the sugar, corn syrup, butter and evaporated milk
~Cook over medium heat, stirring occasionally, until candy thermometer reaches 242.5 F, between soft and hard ball stage
~Remove from heat and immediately stir in remaining ingredients
~Beat the mixture with a large wooden spoon until it begins to stiffen
~Pour into prepared pan and let harden
