Choc-Oat-Chip Cookies

1 cup butter, soft
1 1/4 cup brown sugar
1/2 cup sugar
2 eggs
2 Tbl milk
2 tsp vanilla
1 3/4 cups flour
1 tsp baking soda
1/2 tsp salt
2 1/2 cups oatmeal (uncooked)
2 cups chocolate chips
1 cup nuts (optional)
 
~Preheat oven to 375
~Beat butter and sugars until creamy
~Add eggs, milk and vanilla, beat well
~Add flour, baking soda and salt, mix well
~Stir in oats, chocolate chips and nuts, mix well
~Drop by tablespoon onto cookie sheet
~Bake for 9 – 10 minutes for chewy and 12 – 13 miuntes for crispy

Butter Balls

1 cup butter, softened
1 cup sugar
2 cups flour
1 tsp vanilla
Chopped pecans to taste (optional)
Powdered sugar
 
~Preheat oven to 350
~Cream butter and sugar together 
~Mix in remaining ingredients
~Roll into balls
~Bake for 5 minutes, do not over-bake
~Remove from oven and working quickly and carefully roll into powdered sugar
~Set aside to finish cooling completely

No Bake Chocolate Oatmeal Cookies

2 cups sugar
1/2 cup cocoa
1 stick butter
1/2 cup milk
1 tsp. vanilla
3 cups quick-cooking oatmeal
1/2 cup peanut butter (optional)
1 cup flaked coconut (optional)**
~Combine sugar, cocoa, butter and milk in a saucepan
~Over medium heat, bring to a boil stirring often
~Boil without stirring for 1 minute
~Remove from heat
~Working quickly stir in peanut butter (if adding) and mix until melted then add vanilla and oats, mixing thorough
~Working quickly drop by spoonful onto wax paper
~Refrigerate for at least 30 minutes
**Coconut is added in same step as vanilla and oats
