Crockpot BBQ Chicken

3.5 lbs boneless, skinless chicken breasts

2 cups BBQ sauce (I used RibRack)

¼ c light brown sugar, packed

2 T apple cider vinegar

1 T olive oil

1 tsp garlic powder

½ tsp onion powder

½ tsp paprika

¼ – ½ tsp crushed red pepper

~Combine all ingredients except chicken in bowl, mixing thoroughly

~Pour half of the sauce into crock pot

~Place chicken breasts on top of sauce

~Pour remaining sauce on top of chicken

Cook on low for 6-7 hours or high for 3-4 hours.  Once done, remove chicken breasts from crockpot and shred.  Place chicken back in sauce, stir well and serve.

**If your sauce is too runny from the chicken juices you can add a small amount of cornstarch/water mixture to help thicken.

Finger-Lickin’-Good Shrimp

  • 12 uncooked jumbo shrimp, peeled and deveined
  • 1/4 c Italian salad dressing
  • 1/4 c orange juice
  • 6 bacon strips, cut in half
  • 1 oz Pepper Jack or cheddar cheese, sliced julienne style

~Cut a small slit on the back of each shrimp, not cutting all the way through. In a large resealable plastic bag, combine the salad dressing and orange juice; add shrimp. Seal bag and turn to coat; refrigerate for 30 minutes. Meanwhile, in a skillet or microwave, cook bacon over medium heat until cooked but not crisp. Drain on paper towels

~If grilling the shrimp, coat grill rack with nonstick cooking spray. Prepare grill for indirect heat. Drain and discard marinade; place a piece of cheese in the slit of each shrimp. Wrap bacon around shrimp; secure ends with wooden toothpicks. Grill over indirect medium heat or broil 4″ from the heat for 3 minutes on each side or until the shrimp turns pink.

Taco Salad

  • 1 lb hamburger
  • 1 medium-size onion
  • 3 tomatoes
  • 1 head lettuce
  • 1 bag Doritos
  • 4 oz grated cheddar cheese
  • 1 can of kidney beans (drained)
  • 1/2 cup taco sauce (I use Old El Paso mild)
  • 3/4 cup mayonnaise (NOT Miracle Whip)
  • Salt & Pepper to taste

~Brown hamburger, adding salt and pepper to taste, until done. Drain and set aside.

~Chop onion, tomatoes, and lettuce and combine in large bowl.

~Add cheese, drained kidney beans, and hamburger to lettuce mix. Stir thoroughly.

~Combine Taco Sauce and Mayonnaise thoroughly. Pour over lettuce mixture and stir until coated.

~Add crushed Doritos, stir, and serve immediately.*

*If not serving immediately, or if expecting to have leftovers, add the crushed Doritos right before plating or to individual servings to avoid soggy chips.
