Taco Salad

  • 1 lb hamburger
  • 1 medium-size onion
  • 3 tomatoes
  • 1 head lettuce
  • 1 bag Doritos
  • 4 oz grated cheddar cheese
  • 1 can of kidney beans (drained)
  • 1/2 cup taco sauce (I use Old El Paso mild)
  • 3/4 cup mayonnaise (NOT Miracle Whip)
  • Salt & Pepper to taste

~Brown hamburger, adding salt and pepper to taste, until done. Drain and set aside.

~Chop onion, tomatoes, and lettuce and combine in large bowl.

~Add cheese, drained kidney beans, and hamburger to lettuce mix. Stir thoroughly.

~Combine Taco Sauce and Mayonnaise thoroughly. Pour over lettuce mixture and stir until coated.

~Add crushed Doritos, stir, and serve immediately.*

*If not serving immediately, or if expecting to have leftovers, add the crushed Doritos right before plating or to individual servings to avoid soggy chips.

Ginger Beef Stir Fry

1 tsp cornstarchGinger Beef
1/4 c cold water
1/4 c plum sauce
1 tbl grated, fresh gingerroot
1 tbl soy sauce
1/4 tsp crushed red pepper flakes
1 lb flat iron steak, cut into 2″ strips
1 – 2 tbl vegetable oil
1 medium sweet red pepper, julienned
1 1/2 c fresh broccoli florets
2 medium carrots, peeled and thinly sliced
4 green onions, chopped
1 tsp minced garlic
Hot cooked rice
 
In a small bowl, whisk cornstarch and cold water until smooth.  Stir in plum sauce, ginger, soy sauce and pepper flakes, set aside
 
In large skillet or wok, stir-fry beef in oil until no longer pink, remove and keep warm
 
In the same pan, stir-fry vegetables and garlic until tender.  Return beef to the pan.  Whisk the plum sauce mixture; stir into skillet.  Cook and stir until slightly thickened.  
 
Serve over hot rice

Beef Meatballs with Parmesan

1.5 lbs lean ground beef
4 pinches freshly grated nutmeg
1/2 cup freshly grated Parmesan cheese
4 Tbl snipped fresh parsley
4 Tbl extra virgin olive oil
Salt and Freshly ground pepper to taste
 
~Put beef into bowl and season with salt and pepper
~Add nutmeg, Parmesan cheese and parsley
~Knead the ingredients together with your hands until thoroughly mixed
~Shape the meat mixture into balls the size of a walnut by rolling a small amount of the mixture between your palms to form each one. (To make forming the balls easier, dip your hands into cold water before you begin to shape each ball)
~Heat 2 Tbl olive oil in large nonstick frying pan over medium heat
~Arrange half the meatballs in the pan and cook until golden brown about 5 minutes.  Every now and again, move the pan around in a smooth, circular motion so that the balls will turn to cook on all sides without danger of breaking.  
~Remove the meatballs to a serving plate.
~Add remaining 2 Tbl oil to the frying pan and repeat with remaining meatballs
~Serve hot or may be added to spaghetti sauce
