Bacon Wrapped Chicken

6 boneless skinless chicken breast halves
1 carton (8 0z) whipped cream cheese with onion and chives
1 Tbl butter, cubed
6 bacon strips
Salt to taste
~Preheat oven to 400
~Flatten chicken to 1/2″ thickness
~Spread 3 tablespoons cream cheese over each
~Dot with butter and sprinkle with salt, roll up
~Wrap each with a bacon strip
~Place, seam side down, in a greased 13 x 9 x 2 baking pan
~Bake uncovered for 35 – 40 minutes, or until juices run clear
~Broil 6″ from heat for 5 minutes or until bacon is crisp

Overnight Chicken Pasta Salad

4 chicken breasts, baked & cooled
1 pound pasta – shell or rotini
1 medium onion, diced
2 green peppers, diced
1 – 2 cups Miracle Whip (to taste)

~Cube cooked chicken breasts

~Cook pasta according to package directions

~Combine chicken, cooked pasta, onion, green pepper and 1 cup Miracle Whip, stirring thoroughly

~Add up to 1 cup more of Miracle Whip (depending on taste/consistency desired)

~Salt and Pepper to taste

~Refrigerate overnight

~Serve chilled

Herb Roasted Chicken

1 3 – 3.5 lb whole broiler fryer chicken
2 Tbl butter, melted
2 cloves garlic, minced
1 tsp dried basil, crushed
1/2 tsp salt
1/2 tsp ground sage
1/2 tsp dried thyme, crushed
1/4 tsp lemon-pepper seasoning or black pepper

~Preheat oven to 375

~Rinse inside of chicken; pat dry with paper towels. Skewer neck skin of chicken to back; tie legs to tail.  Twist wing tips under back.  Place chicken, breast side up, on a rack in a shallow roasting pan.  Brush with melted butter; rub garlic over chicken

~In a small bowl, stir together basil, salt, sage, thyme and lemon-pepper (or black pepper); rub onto chicken.

~Roast, uncovered for 1 1/4 – 1 1/2 hours or until drumsticks move easily in their sockets and chicken is no longer pink.  Remove chicken from oven.  Cover; let stand for 10 minutes before carving
