Seven-Layer Tex-Mex Dip

  • 1 (15 1/2oz) can refried beans (choice)
  • 1 Tbl lime juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 c sour cream
  • 1 c guacamole
  • 1 c grated Mexican-blend cheese
  • 3 plum tomatoes, seeded and chopped
  • 3 scallions, sliced
  • 1 cup shredded romaine lettuce, shredded
  • Cilantro
  • Tortilla chips

~In large bowl, combine beans, lime juice, salt, pepper and 1 Tbl water. Spread evenly on serving platter

~Layer on sour cream, leaving a 1″ border of beans visible. Add guacamole, leaving 1″ of sour cream visible. Continue adding layers – cheese, tomatoes, scallions, and lettuce – making each one smaller than the one before. Sprinkle with cilantro.

~Serve immediately with chips or cover and refrigerate up to 2 hours.

Jalapeno Poppers

1 package (8 oz) cream cheese, softened
1 cup (4 oz) shredded cheddar cheese
1 cup (40z) shredded Monterrey Jack cheese
1 jar bacon bits
1/4 tsp salt
1/4 tsp chili powder
1/4 tsp garlic powder
1 lb fresh jalapenos, halved & seeded*
1/2 cup bread crumbs
 
~Preheat oven to 300
~On lightly greased cookie sheet, lay out jalapeno pepper halves – set aside
~In large bowl combine first 7 ingredients; mix well**
~Spoon approximately 2 tablespoons of cheese mixture into each pepper half
~Lightly press bread crumbs onto each cheese filled pepper
~Bake for 20 for spicy; 30 minutes for medium; 40 minutes for mild
 
*When seeding peppers always use gloves and avoid touching your face
**For an extra kick, add 1/2 – 1 lb spicy sausage, fully cooked and drained to cheese mixture before filling the peppers

Sliders

2 lbs ground beef*
2 eggs
2 – 3 Tbl Olive oil
2 Tbl red wine vinegar
2 Tbl Worcestershire sauce
Garlic, salt, pepper to taste
Additional seasonings as desired
2 packages Hawaiian sweet rolls, sliced
 
~Mix all ingredients in a bowl.  Mixture should be “wet”, vinegar, oil or water may be added to achieve this
~ Form into small balls and place on hot griddle that has been prepped with Olive oil
~Flatten with spatula and cook 4 – 5 minutes on each side or until done
~On separate smaller griddle pan heat small amount of Olive oil and “toast” rolls open face style (if you like onions, add a small amount of diced onions to the pan along with the oil)
~As burgers get done, place on toasted roll and top as desired with cheese, grilled onions and/or your favorite burger toppings
~Serve warm
 
*I use venison (1/2 venison 1/2 hamburger) – however any ground meat could be substituted
