BBQ Chicken and Pineapple Skewers

1 cup ketchup
1/4 cup soy sauce
1/4 cup of honey
1 Tbl yellow mustard
1/4 cup light brown sugar
2 cloves garlic, minced
1/4 lemon, juiced
1/2 fresh pineapple, chopped
4 boneless & skinless chicken breasts, cubed
Sea salt and freshly cracked pepper
Olive oil
 
~In small saucepan, combine ketchup, soy sauce, honey, mustard, brown sugar, garlic, and lemon juice and cook for 20 minutes over low heat, stirring often
~Thread chicken and pineapple, alternately, onto skewers.  Season with sea salt and freshly cracked pepper to taste
~Pour half the sauce into a small bowl and set aside
~Brush the skewers with the remaining sauce from pan
~Heat a large grill pan over medium heat and drizzle the pan with olive oil.  Cook the skewers for 2 minutes on each side (4 sides) for a total of 8 minutes or until the chicken is cooked through.  
~Serve with reserved BBQ sauce
Optional cooking means – bake; grill
**If using bamboo skewers, soak them in warm water for 10 – 15 minutes

BBQ Kielbasa

1/4 c 7-up
1/4 c brown sugar
1/2 c BBQ sauce
1 package Kielbasa
 
~Preheat oven to 375
 
~Cut Kielbasa into bite sized pieces.  Place in casserole dish
 
~In small saucepan, combine 7-up, brown sugar, and BBQ sauce.  Cook until warm and just beginning to boil
 
~Pour sauce over Kielbasa
 
~Bake for 30 – 45 minutes or until golden brown and thoroughly coated

San Antonio BBQ

3 lb beef roast
1 lb pork roast
1/2 cup onion, chopped
1 cup celery, chopped with leaves
Salt & Pepper to taste
2 Tbl brown sugar
4 Tbl lemon juice
1 20 oz bottle ketchup
3 Tbl Worcestershire sauce
1 tsp mustard
1/2 c water
Salt and pepper to taste

~Preheat oven to 350 **

~Put beef and pork roast in large pan

~Add onions, celery and salt and pepper

~Bake until cooked through and shreds with fork

~Once meat is cooked through, pull from oven and allow to rest while putting sauce together

~Add remaining ingredients to saucepan and simmer over low heat for 30 minutes

~While sauce is simmering, shred meat and place back in pan, draining broth from pan first

~Pour sauce over meat and place back in oven for at least 60 minutes, checking and stirring often

**This can be done in a crock pot.  Add meat to the crock pot and set on low (for all day cooking) or high and allow to cook until done.  Finish out the same as if preparing in the oven only cooking off in crock pot.
