Deviled Eggs

8 small hard boiled eggs
1/4 cup mayonnaise
2 tsp heavy cream
2 tsp cider vinegar
2 tsp Dijon mustard
1/2 tsp sugar
1/2 tsp salt
1/8 tsp pepper
Paprika
 
~Cut eggs in half lengthwise, remove yolks carefully
~Rinse whites under cold water, place upside down on paper towel to drain
~Process (or smash with fork) egg yolks until smooth
~Add mayonnaise, heavy cream, vinegar, mustard, sugar, salt and pepper and blend until smooth and fluffy
~Turn egg whites right side up and fill each with a spoonful of yolk mixture
~Sprinkle filled eggs lightly with paprika
~Chill for at least 2 hours before serving

Classic Potato Salad

3 large Yukon gold potatoes (about 1 3/4 pounds), peeled and cut into 1″ cubes
3 large eggs
1/2 cup diced onion
1/2 cup diced celery
2 Tbl sweet relish
1 Tbl Worcestershire sauce
1 tsp hot sauce
Kosher salt and freshly ground pepper
1 cup mayonnaise
2 scallions, thinly sliced

~Bring a large pot of water to a boil.  Add the potatoes and cook until tender, about 15 minutes.  Drain the potatoes and spread out on a sheet pan to cool.  Meanwhile, bring a separate pot of water to a boil.  Carefully add the eggs; cook for 12 minutes, then reove to a bowl of ice water to cool completely.  Peel the eggs under cold running water, then roughly chop.

~In large bowl, combine the onion, celery, relish, Worcestershire sauce, hot sauce, 1 1/2 tsp salt, 1 tsp pepper and the maynnaise.  Fold in the potatoes, eggs and scallions.  Adjust the seasoning to taste.

Breakfast Casserole

1 can crescent rolls
1 package Brown ‘n Serve sausage links, sliced
2 cups Monterrey Jack cheese, shredded
4 eggs
1/4 cup milk
Salt & Pepper to taste
~Preheat oven to 400
~In 9 x 13 pan, spread out crescent rolls, pressing “seams” closed
~In large bowl combine eggs, milk, salt and pepper
~Place sausage link slices on crescent roll crust
~Sprinkle evenly with cheese
~Pour egg/milk mixture cheese
~Bake for 20 – 25 minutes
