6 Tbl olive oil
3 Tbl lemon juice
1 clove garlic
2 Tbl mediterranen basil
Mushrooms
1 red bell pepper
1 yellow bell pepper
1 onion
3 large chicken breasts
1/2 tsp salt
1/4 tsp pepper
~In small bowl mix the olive oil, lemon juice, garlic (finely chopped), basil, salt and pepper
~Cut the peppers and onions into 2″ squares
~Cut the chicken into 2″ squares
~Place peppers, onions, mushrooms and chicken into a large container with an air tight lid
~Pour the marinade over the chicken and vegetables, stir and seal
~Refrigerate for at least 30 minutes, stirring at least twice
~Remove container from refrigerator and alternately thread chicken and vegetables onto lightly greased skewers*, reserve juice
~Grill OR Broil under high heat for 20 minutes or until done, basting and turning at least once with reserved juice
*If using bamboo or wooden skewers soak them in warm water for at least 20 minutes prior to use
**You can choose different vegetables such as eggplant, zucchini etc. The original recipe called for those, however since I don’t care for either I substituted for ones I do like.
1 cup ketchup
1/4 cup soy sauce
1/4 cup of honey
1 Tbl yellow mustard
1/4 cup light brown sugar
2 cloves garlic, minced
1/4 lemon, juiced
1/2 fresh pineapple, chopped
4 boneless & skinless chicken breasts, cubed
Sea salt and freshly cracked pepper
Olive oil
~In small saucepan, combine ketchup, soy sauce, honey, mustard, brown sugar, garlic, and lemon juice and cook for 20 minutes over low heat, stirring often
~Thread chicken and pineapple, alternately, onto skewers. Season with sea salt and freshly cracked pepper to taste
~Pour half the sauce into a small bowl and set aside
~Brush the skewers with the remaining sauce from pan
~Heat a large grill pan over medium heat and drizzle the pan with olive oil. Cook the skewers for 2 minutes on each side (4 sides) for a total of 8 minutes or until the chicken is cooked through.
~Serve with reserved BBQ sauce
Optional cooking means – bake; grill
**If using bamboo skewers, soak them in warm water for 10 – 15 minutes

1 Tbl paprika
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp ground red pepper
1/4 tsp thyme
1/8 tsp allspice
2 Tbl Olive Oil
1 .5 lbs peeled & devined large shrimp
Cooking spray
~Get your grill ready
~Combine 1st 7 ingrediants
~Combine oil & shrimp in large bowl and toss well to coat
~Sprinkle spice mix over shrimp, toss to coat
~Place on skewers
~Grill 6 minutes, turning once
