Taco Salad

  • 1 lb hamburger
  • 1 medium-size onion
  • 3 tomatoes
  • 1 head lettuce
  • 1 bag Doritos
  • 4 oz grated cheddar cheese
  • 1 can of kidney beans (drained)
  • 1/2 cup taco sauce (I use Old El Paso mild)
  • 3/4 cup mayonnaise (NOT Miracle Whip)
  • Salt & Pepper to taste

~Brown hamburger, adding salt and pepper to taste, until done. Drain and set aside.

~Chop onion, tomatoes, and lettuce and combine in large bowl.

~Add cheese, drained kidney beans, and hamburger to lettuce mix. Stir thoroughly.

~Combine Taco Sauce and Mayonnaise thoroughly. Pour over lettuce mixture and stir until coated.

~Add crushed Doritos, stir, and serve immediately.*

*If not serving immediately, or if expecting to have leftovers, add the crushed Doritos right before plating or to individual servings to avoid soggy chips.

Cheeseburger Pie

1 pie crust
1 lb ground beef
1 tsp salt
1/2 tsp oregano
1/4 tsp pepper
1/2 cup bread crumbs
1 can (8 oz) tomato sauce
1/4 cup chopped onion
1/4 cup chopped green pepper
1/2 cup Chili Sauce
Cheese topping*
 
~Preheat oven to 425
~Set crust out to warm to room temperature
~In medium skillet, cook and stir meat until browned, drain
~Stir in salt, oregano, pepper, bread crumbs, 1/2 c of tomato sauce, onions and green peppers – set aside
~Place pie crust in lightly greased 9″ pie pan
~Place meat mixture in pie crust
~Spread cheese topping on top of meat mixture
~Bake 30 minutes, cool slightly and cut into wedges
~Stir together remaining tomato sauce and chili sauce and serve with pie 
 
Cheese Topping Recipe
1 egg
1/4 cup milk
1/2 tsp salt
1/2 tsp dry mustard
1/2 tsp Worcestershire sauce
2 cups shredded cheddar cheese
 
~Beat egg and milk; stir in seasonings and cheese

Sliders

2 lbs ground beef*
2 eggs
2 – 3 Tbl Olive oil
2 Tbl red wine vinegar
2 Tbl Worcestershire sauce
Garlic, salt, pepper to taste
Additional seasonings as desired
2 packages Hawaiian sweet rolls, sliced
 
~Mix all ingredients in a bowl.  Mixture should be “wet”, vinegar, oil or water may be added to achieve this
~ Form into small balls and place on hot griddle that has been prepped with Olive oil
~Flatten with spatula and cook 4 – 5 minutes on each side or until done
~On separate smaller griddle pan heat small amount of Olive oil and “toast” rolls open face style (if you like onions, add a small amount of diced onions to the pan along with the oil)
~As burgers get done, place on toasted roll and top as desired with cheese, grilled onions and/or your favorite burger toppings
~Serve warm
 
*I use venison (1/2 venison 1/2 hamburger) – however any ground meat could be substituted
