Andes Surprise Pillow Cookies

1 c unsalted butter – softened

1 c sugar

1 large egg

1 tsp vanilla

3 c flour

1 tsp baking powder

1//2 tsp salt

38 Andes Creme de Menthe Thins

~Preheat oven to 400

~In a large mixing bowl, combine sugar, butter, eggs and vanilla

~Use electric mixer at medium speed to beat until light and fluffy. Add flour, baking powder and salt and beat at low speed until soft dough forms

~Divide dough in half.  On well-floured surface, roll half of the dough into a 14 x 9″ rectangle.  Arrange mints evenly on dough, forming 7 rows of 7.

~Between 2 sheets of wax paper, roll remaining dough into a second 14 x 9″ rectangle.

~Remove one sheet of wax paper and discard.  Carefully turn second rectangle over mint-topped dough, matching edges.  Remove remaining wax paper.

~Using a pizza cutter or scalloped-edge pastry wheel, cut dough evenly between mints.  Gently press edges of “pillows” to seal.

~Place pillows 2 inches apart on ungreased cookie sheets.  Bake for 7 to 10 minutes or until edges are light brown.

~Cool completely before storing

Makes ~4 dozen cookies

Christmas Fudge

5 cups sugar
1 (13oz) can evaporated milk
1/4 lb butter
12 oz marshmallow cream
1 tsp salt
1 tsp vanilla
2 (12oz) bags chocolate chips
1 cup walnuts (optional)
 
~Combine first 5 ingredients in 4 quart saucepan.  Stir over low heat until blended.
 
~Bring to boil over medium heat, being careful not to mistake escaping air bubbles for boiling.  Boil slowly, stirring constantly for 5 minutes (over cook rather than under cook).
 
~Remove from heat, stir in vanilla, chocolate chips and walnuts.  Stir until chocolate is melted.  Pour into 2 butter 9×9 pans and cool.
 
~Yield 5 pounds

Monkey Bread

2 packages yeast
1 tsp sugar
1/4 cup warm water
1/2 cup butter
1/2 cup sugar
1 tsp salt
3/4 cup scalded milk
5 cups flour
3 large eggs
 
~Preheat oven to 375
~Dissolve yeast and 1 tsp sugar in warm water
~In large bowl combine sugar, butter, and salt
~Pour scalded milk over this and stir to melt butter
~Add yeast and 1/2 of the flour
~Beat in eggs
~Add remaining flour and turn onto floured board and knead
~Place in buttered bowl and let rise until double
~Roll out and cut into squares
~Dip each piece in melted butter (1/2 cup)
~Arrange in tube pan (bundt pan)
~Rise until double
~Bake for 45 minutes
 
 **You can add a cinnamon/sugar coating to each buttered square before layering to make this more of a “breakfast/brunch” bread
