Baked Honey-Dijon Chicken

2 6-oz chicken breasts

2 Tbl honey

2 tsp parsley

1/4 c Dijon mustard

Olive oil

~Preheat oven to 350

~In large skillet heat olive oil and sear chicken breasts for 30 seconds to 1 minute on each side

~Combine honey, parsley and mustard in small bowl, mixing well

~Spread evenly over chicken breasts and place in 8×8 baking pan

~Bake at 350 for 30 minutes or until juice runs clear

Honey and Orange Glazed Chicken

6 oz boneless chicken breasts
1/4 tsp salt
1 Tbl oil
4 green onions, chopped
1 garlic clove, crushed
3 Tbl honey
4 Tbl fresh orange juice
1 orange, peeled and segmented
2 Tbl soy sauce
 
 
~Preheat oven to 375
~Place chicken breasts in a shallow roasting pan, sprinkle with salt and set aside
~Heat oil in small pan, fry the scallions and garlic until softened, about 2 minutes
~Add the honey, orange juice, orange segments and soy sauce to the pan, stirring well until the honey has dissolved
~Pour sauce over chicken and bake, uncovered, for about 45 minutes, basting with the glaze once or twice until chicken is cooked

Salsa

  • 1- 14 oz can diced tomatoes
  • 1- 10 oz can orginal Rotel
  • 1/2 small red onion, roughly chopped
  • 1 clove garlic, peeled and smashed
  • 1/2-1 jalapeno, seeded or not (depends on how spicy you like it)
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • small handful of cilantro, washed
  • juice of 1 lime

Instructions

  1. Put all the ingredients in the base of a food processor or good blender and pulse to combine for 30 seconds or so until all the ingredients are finely chopped and salsa is desired consistency. Taste for seasoning and adjust to taste. Serve with chips or over tacos.
