Stuffed Manicotti

1 lb ground beef
1/2 cup chopped onion
1 lg clove garlic, chopped
2 60z cans tomato paste
2 cups water
2 Tbl parsley
1 Tbl basil
1 1/2 tsp salt
Pepper
1 1/2 lbs ricotta cheese
2/3 cup Parmesan cheese
2 eggs
1/4 cup chopped fresh parsley
1/2 tsp salt
8 manicotti shells, uncooked
1/2 cup Parmesan cheese
 
~Preheat oven to 350
~In large skillet brown meat, drain, return to pan
~Add onion, garlic, tomato paste, water, parsley, basil, 1 1/2 tsp salt and dash pepper to hamburger.  Simmer uncovered approximately 30 minutes, stirring occasionally
~Meanwhile, combine ricotta, 2/3 c Parmesan, eggs, fresh parsley, 1/2 tsp salt and dash of pepper – set aside
~Cook manicotti shells according to package directions, drain and rinse with cold water
~Lightly grease a 12 x 7 x 2 dish
~Pour half of the meat mixture in the bottom of prepared pan
~Stuff manicotti shells with cheese mixture
~Place in pan
~Top with remaining sauce
~Sprinkle with 1/2 cup Parmesan cheese
~Bake for 30 – 35 minutes

Four Layer Oven Ready Lasagna

1 box (9 oz) uncooked lasagna noodles
2 eggs
1 container (15 oz) Ricotta cheese
8 oz fresh mozzarella cheese (ungrated)
8 oz grated mozzarella cheese
1/2 c Parmesan cheese
1 pckg (8 oz) fresh sliced mushrooms, rinsed
Fresh spinach, rinsed and chopped
1 lb (or more) chicken, boiled and chopped
2 jars (26 oz each) spaghetti sauce – choice*
~Preheat oven to 375
~In medium bowl combine eggs, ricotta, grated mozzarella and the Parmesan cheese
~Spread 1 cup of spaghetti sauce on bottom of baking pan
~Layer 4 uncooked sheets noodles, 1/3 cheese mixture, half of the chicken, half of the mushrooms, and enough spinach to lightly cover the mushrooms, half of the fresh mozzarella (sliced) and 1 cup of sauce
~Layer 4 uncooked sheets, 1/3 cheese mixture and 1.5 cups sauce
~Layer 4 uncooked sheets, remaining ricotta, chicken, mushrooms, spinach and 1 cup of sauce
~Layer 4 uncooked sheets, remaining sauce and remaining fresh mozzarella slices
~Cover with foil and bake 50  – 60 minutes, uncover and continue to cook until cheese is fully melted (about 5 – 8 minutes)
~Let stand 15 minutes before cutting
**When layering lasagna, slightly overlap the sheets.  Lasagna will expand to the edges during baking.  Spread fillings to edges to seal in and cook the lasagna during baking. 
*If using 2 different sauces, pour both into a bowl and combine thoroughly before beginning assembly

Overnight Chicken Pasta Salad

4 chicken breasts, baked & cooled
1 pound pasta – shell or rotini
1 medium onion, diced
2 green peppers, diced
1 – 2 cups Miracle Whip (to taste)

~Cube cooked chicken breasts

~Cook pasta according to package directions

~Combine chicken, cooked pasta, onion, green pepper and 1 cup Miracle Whip, stirring thoroughly

~Add up to 1 cup more of Miracle Whip (depending on taste/consistency desired)

~Salt and Pepper to taste

~Refrigerate overnight

~Serve chilled
