Peanut Butter Rice Krispie Bars

6 cups Rice Krispies
1 cup Karo syrup
1 cup granulated sugar
1 cup peanut butter
1 cup chocolate chips
1 cup butterscotch chips
 
~Measure out Rice Krispies and set aside in large bowl
~In medium saucepan combine sugar and Karo syrup.  Bring just to simmer, then add peanut butter and stir.  Do not let the mixture boil
~Working quickly, pour peanut butter mixture into Rice Krispies and mix thoroughly.  Pour mixture into prepared 9×12 lightly greased pan and flatten out evenly, being careful as mixture is hot

3/4 cup butter
3 1/4 to 3 3/4 cups powdered sugar
1 cup peanut butter
1 Tbl milk
1/2 tsp vanilla
16 oz semi sweet chocolate
1 Tbl shortening
 
~Melt butter over low heat
~Combine butter and 2 cups powdered sugar, beat until smooth
~Add peanut butter, beat until smooth
~Stir in milk and vanilla
~Beat in enough of the remaining powdered sugar to make firm, crumbly looking mixture
~Roll into 1″ balls
~Chill 1 hour
~Melt chocolate, using dipping fork dip cookie 3/4 way in chocolate
~Place undipped portion up, onto wax or parchment paper 
~Chill until firm, store in refrigerator

Peanut Butter Fudge

4 cups sugar
1/2 cup light corn syrup
2 sticks unsalted butter
1 cup evaporated milk
1 Tbl pure vanilla extract
1 cup (9 oz) smooth peanut butter
2 heaping Tbl marshmallow cream
~Lightly grease 9 x 13 pan, set aside
~In large saucepan, combine the sugar, corn syrup, butter and evaporated milk
~Cook over medium heat, stirring occasionally, until candy thermometer reaches 242.5 F, between soft and hard ball stage
~Remove from heat and immediately stir in remaining ingredients
~Beat the mixture with a large wooden spoon until it begins to stiffen
~Pour into prepared pan and let harden
