Honey and Orange Glazed Chicken

6 oz boneless chicken breasts
1/4 tsp salt
1 Tbl oil
4 green onions, chopped
1 garlic clove, crushed
3 Tbl honey
4 Tbl fresh orange juice
1 orange, peeled and segmented
2 Tbl soy sauce
 
 
~Preheat oven to 375
~Place chicken breasts in a shallow roasting pan, sprinkle with salt and set aside
~Heat oil in small pan, fry the scallions and garlic until softened, about 2 minutes
~Add the honey, orange juice, orange segments and soy sauce to the pan, stirring well until the honey has dissolved
~Pour sauce over chicken and bake, uncovered, for about 45 minutes, basting with the glaze once or twice until chicken is cooked

Beef Kushisashi

1/2 cup soy sauce
1/4 cup chopped green onions, w/ tops
2 Tbl sugar
1 Tbl vegetable oil
1.5 tsp cornstarch
1 clove garlic, pressed
1 tsp grated fresh ginger root
2.5 lbs boneless beef sirloin steak
 
~ Blend soy sauce, green onions, sugar, oil, cornstarch, garlic and ginger in small saucepan. 
~ Simmer, stirring constantly, until thickened, about 1 minute.  Cool.  Cover and set aside.
~ Slice beef into 1/8″ thick strips about 4″ long and 1″ wide.  Thread onto bamboo (soaked in water for at least 15 minutes first) or metal skewers, keeping meat as flat as possible.
~ Brush both sides of beef with sauce
~ Place on rack of broiler pan; broil to desired degree of doneness

Chicken Chow Mein

1 green pepper, diced
1 cup boiling water
2 stalks celery, sliced
2 1/2 Tbl butter
1 smal onion, diced
1 Tbl flour
1 cup chicken broth
2 Tbl soy sauce
8 oz sliced mushrooms
8 – 12 oz chicken breast, cooked and cut into bite size pieces
Salt & Pepper to taste
8 oz egg noodles
 
~Blanch green peppers in cup of boiling water for 2 minutes, drain
~In frying pan or wok, melt butter.  Add green pepper, onion, and celery – cook until transparent
~Stir in flour, chicken broth, soy sauce, mushrooms and chicken.  Cook for 30 minutes, stirring often.  Season with salt and pepper to taste.
~Meanwhile, cook noodles according to package directions.
~Serve over warm noodles
 
**I usually double the soy sauce for added flavor **
